Braised Wild Boar
Traveling in Tuscany is a cultural, natural, and culinary experience. Food lovers are delighted, especially by one of our most famous specialties: braised wild boar.
Braised wild boar is a slow-cooked dish that requires many hours of preparation and cooking — the marinade starts a day before.
At Pendolino, we are fortunate to have hunters supplying us with local wild boar: plump, flavorful, and rich with meat around the bone.
The boar is first soaked in brine for many hours, infused with spices and red wine, resting according to ancient rituals. Garlic, rosemary, sage, bay leaf, thyme, marjoram, juniper berries — the more, the merrier. It’s turned by hand, just like in the old days.
It’s then slow-cooked for 2 to 3 hours, reusing a bit of the marinade wine and simmered in tomato sauce. Red wine is essential in this connoisseur’s dish.
Enjoy your meal!
