Black Crostini, Our Passion

Every family fiercely guards its own recipe — and changing it is forbidden!
The original version uses chicken livers and spleen as the base, but countless variations exist.

Some add ground pork, some remove the spleen, others omit the livers but keep the spleen… everyone follows their own taste.

They are served on typical Tuscan “sciapo” bread, which is unsalted. This is what allows our rich and flavorful sauces to find perfect balance.
