Our restaurant has a long history of working with seafood. Our trusted supplier knows our walk-in fridge better than we do, given the frequency of his weekly stops to ensure we get the freshest, most flavorful, and best-value catch. Offering seafood dishes alongside Tuscan classics like wild boar stew and pici all’aglione is always a challenge for a restaurant in the Tuscan hinterland. But we love a challenge including the task of satisfying younger palates, who are often more interested in trends than in tried-and-true staples. Octopus, as we know, has a pleasant, oceanic flavor that appeals to both adults and children. It is low in fat and calories yet rich in protein. It is packed with essential minerals such as iron, calcium, potassium, and phosphorus as well as B vitamins and valuable vitamin C, which helps boost the immune system, especially during seasonal transitions. It is no wonder so many people have fallen in love with our octopus, which is carefully selected and expertly cooked: a creature that is incredibly intelligent in life and offers generous, flavorful meat on our tables. First of all, for both our restaurant kitchen and our Albatros catering service, we source only authentic octopus with a deep, vibrant red color never faded. Our octopuses arrive firm never limp with symmetrical, vigorous, and plump tentacles. Making octopus meat tender enough for modern palates is not a simple task. While “beating” the octopus is only effective immediately after the catch, freezing it is a more practical method; freezing helps relax the fibers, a process complemented by skillful boiling in lemon-infused water. A pro tip? After a few minutes of boiling, simply turn off the heat and let the octopus cool in the pot with the lid on; it will finish cooking to perfection on its own.
