We are currently embracing a 1950s–70s retro vibe—who remembers this? Certainly not the youngest generation, but many of us do. This pyramid was invented to make the wedding toast unforgettable back when there wasn’t a dedicated setting for the cake-cutting ceremony. At the end of the meal weddings were typically seated luncheons that wrapped up by 6 p.m. the toast was made to wish happiness and prosperity to the newly formed family. It is known as a champagne tower (or *piramide di calici*), and it works like this: Prosecco or Tuscan sparkling wine is poured at the very top, gently cascading down into the glasses below. Naturally, vintage-style coupe glasses are used to ensure the structure’s stability and guarantee a safe, smooth flow. Technically, this moment can take place either at the start of the reception or after the cake is cut; either works beautifully, as the visual spectacle creates an unforgettable moment of great charm and elegance. At Podere Pendolino pictured here we chose to stage this special moment in the garden, in front of the portico. One thing must be said, however: we are Italian and boast the world’s best-selling sparkling wine, Prosecco. Furthermore, excellent sparkling wines are produced right here in Tuscany; there is no need to look to Champagne!
