Delighted by the worldwide recognition of Italian Cuisine as a UNESCO Intangible Cultural Heritage, we approach 2026 with renewed confidence. The five-year period that the Italian restaurant industry has left behind has certainly not been easy: from the pandemic to today, the Italian restaurant industry has seen an increase in business closures and restaurant closures; and we’re not just talking about makeshift restaurants, but real establishments with a history of customers and passion. The word resilience is more relevant than ever and requires a pace, a sustained pace to keep up with what’s happening outside: customers are increasingly attentive to the value you convey, they want ever-changing experiences, and they spend differently. First of all, we thank you for your loyalty in 2025, the year we celebrate 15 years of Podere Pendolino, now a young man. Service, kindness, and tradition have always been our core values, but the generational change—both ours and yours—has required new challenges and adjustments. Our young chefs, this fresh and motivated kitchen brigade, the young people trained to provide agile dining room service, the passionate sommeliers who constantly explore new pairings for our seasonally updated menus. This year, too, we celebrated many events together, including with the collaboration of external partners, offering unusual pairings of our traditional Tuscan cuisine with wines from other regions, not least the Champagne so beloved in the Arezzo area. All of you have reminded us that we are experience for all of you: that’s why we’ve learned new styles and techniques, renovated the facility and its furnishings, innovated the kitchen, and invested. Our brigade of young chefs reminds us of their ambition for 2026 as well: daring doesn’t mean improvising. Our young men and women boast a deep knowledge of the basics, a respect for Tuscan culture, and an understanding of the chemical reactions between old and new ingredients, transforming the boldness of a dish into a truly sensory experience to be remembered, recounted, and shared. And we count on you to continue this path in the coming year. Thank you for rewarding us in these first 15 years of Podere Pendolino.
