frutti rossi

Red fruits are a must-have for wedding cakes and more, even in this newly-started summer season. Let’s see why… First of all, they offer an elegant aesthetic; even casually combined, their shades of red and black offer a charming spectrum of colors. Technically, they are among the simplest fruits found in nature, picked wild in woods and pine forests—think blackberries, blueberries, and strawberries. Left exposed on pastry, whether shortcrust or puff pastry, perhaps filled with custard or Chantilly cream, they offer a naturally perfect display of colors. Some even bet on their effect by offering a naked cake, a cake in plain sight, uncovered, where the berries take center stage. You can also try a berry confit inside the cake, or pair them with chocolate for a sweet-tart contrast that enriches the taste. Not to mention the benefits of red fruits, rich in antioxidants and low in sugar. Recently, we’ve also seen combinations of red fruits and flowers, or just petals: these have generally worked well, creating informal decorations with a natural, spontaneous look, like those our Albatros pastry shop will be offering you in the coming months.
